01 / ABOUT THE PLACE

About this place

Set on the 5th floor of a commercial building in Nishi-Shinjuku, Sushi Biyori offers a calm retreat just above the district's lively avenues. Centered around an intimate counter, guests can settle in for a deliberate dinner while observing the chef's careful handiwork up close.

The heart of the experience is an omakase course structured around seasonal seafood. The meal opens with meticulously composed dishes designed to bring out each ingredient's character, such as seared sawara (Spanish mackerel) dressed with grated onion soy sauce, a clear soup with dumplings made from Akashi octopus, or white tilefish steamed gently with sake and kombu to let its natural delicacy shine.

The progression transitions smoothly into Edomae-style nigiri, showcasing traditional techniques across cuts like soy-marinated lean bluefin tuna, medium-fat chu-toro, kombu-cured botan shrimp, kohada (gizzard shad), cured mackerel, and tender simmered anago. A crisp nori-wrapped tro-taku roll balances fatty tuna richness with pickled radish crunch before the meal closes with a choice of seasonal fruit or fragrant crème brûlée.

To accompany the cuisine, the beverage selection highlights premier regional sakes—including Hakurakusei, Mimurosugi, Nabeshima, and Juyondai—alongside Japanese whiskies such as Hakushu and Yamazaki, as well as selected white wines. With a focused counter setting, securing a reservation in advance is recommended for solo meals and celebratory dinners alike.
